Ice pop coolers are a delicious frozen treat to beat the heat

Recipe for Ice Pop Cooler
Make these delicious and nutritious ice pop coolers as a frozen treat in warm weather!
Ingredients:
1 cup sugar
1 cup loosely packed mint leaves
Juice of 6 lemons
4 cups sparkling water, chilled
6 skinny all-natural fruit ice pops
Tip to get ahead: Refrigerate the flavored simple syrup for up to 1 week.
Directions:
In a small saucepan, combine the sugar with 1 cup water. Bring to a boil over medium heat, stirring, until the sugar is dissolved. Let cool for 15 minutes, then stir in the mint. Refrigerate until cold, or up to 6 hours, then strain.
In a pitcher, stir together the mint-sugar syrup and lemon juice. Mix in the sparkling water. Pour into chilled glasses and serve with the ice pops as stirrers.
Makes 6 servings.
